Market Mondays: Roasted Beet And Poached Pear Salad

For this week's edition of Market Mondays, I picked up a few veggies from the Union Square Greenmarket and set to work on a dinner-worthy salad. I roasted beets, poached pears, cut up apples and cheddar cheese and tossed them with peppery arugula and crushed cashews. I added Meyer lemon olive oil, and a dash of salt and pepper for a wholesome wintery meal (even though the weather has been so gorgeous it feels more like spring).

Honeycrisp are my fave, but Fuji are a close second
