Savory Pumpkin Bites


Every year, a week or so before Halloween, I invite my girlfriends over to carve pumpkins. I use the gathering as an excuse to show off my grand carving skills (I call them Picasso-esque, but several people disagree) and chow down on festive sugary baked goods. This year, in an attempt to balance out my overindulgent sweet tooth, I plan to set out a few savory, sugarless pumpkin flavored treats. Below is the recipe for Savory Pumpkin Bites (it began as an attempt at a dip until I decided to bake individual bites)- they will be making their debut at next week's get-together:

Savory Pumpkin Bites (yield: approx. 48 bites)
Ingredients:
15 oz can garbanzo beans, drained
15 oz can pumpkin purée
1/4 cup tahini
3 tsp extra virgin olive oil
2 1/2 tbsp fresh squeezed lemon juice
1 1/2 tsp salt
1 tsp chopped sage
1 tsp freshly grated cinnamon
1 tsp freshly grated nutmeg
1/2 tsp cumin
Preparation:
1. Preheat oven to 350 degrees.
2. Combine all ingredients in a food processor and blend until smooth.
3. Scoop 1 tbsp sized balls onto a Silpat and bake for approximately 25 minutes.

  1. Mmmmm...I sure hope I can indulge along with you this weekend. I love all things healthy and delcious-- what an under-utilized combo! I love that a dip became individual bites of baked goodness.
